HOMEMADE BREAD
(start to finish - 1 hour)
Makes 4 LOAVES -- if you don't have a large freezer or friends to share with, adapt the recipe for 2 loaves.
10 1/2 cups of whole wheat flour
1/2 cup sugar
1 Tbsp. salt
3 rounded Tbsp. Saf-Instant Yeast
3 Tbsp. liquid Lecithin*
3 cups hot tap water
1 cup applesauce
Mix dry ingredients. Add lecithin and water. Mix for 1 minute and check consistency. If dough is too dry, add more water. If dough is too moist, add more flour. Mix for 10 minutes. (Do NOT add water or flour to the dough after it has finished mixing.) Spray the counter and loaf pans with PAM®. Shape loaves, place dough into pans, and cover with a dish towel. Let raise for 25 minutes. Bake for 25 minutes at 350° F.
* Squeeze or pour approximately 3 tablespoons of lecithin directly into the bowl. Do not measure.
